Here’s a little tasty treat for the summer ‘Summer chicken salad, hand pittas’
Ingredients: (serves 2)
- 1 grilled chicken breast
- Half an apple
- 4/5 slices of cucumber
- A hand full of lettuce
- A small hand full of black olives
- 3 sun dried tomatoes
- 2 wholemeal pittas
Method:
- Chop all ingredients into fine pieces
- Mix together with a dash of olive oil and balsamic vinegar.
- Half and the pittas and lightly toast
- fill the pittas with the chicken salad and enjoy!
